10 Recipes I've Recently Tried and Loved

I've always cooked a lot. That's what happens when you live by yourself, want to eat healthy (not to mention save money) and genuinely enjoy it. But I mainly cooked dinner. Ever since we all started staying home, I've been cooking breakfast, lunch and dinner almost every day. And I'm not going to lie, I can only take so much of my own cooking even when it turns out pretty tasty! (Hence why I treat myself to take out at least 2x a week.)

But it also means that I need to find a lot more recipes. I have a tried and true list of recipes that I had a tendency to rotate through and then every once in a while I would add something new in. But in the last couple of months, I have been trying a ton of new recipes and I wanted to share my 10 favorites so far.


  1. SkinnyTaste Skillet Cheesy Chicken and Veggie "Rice" - I'm a huge fan recipes that use cauliflower and broccoli as a substitute for white rice!
  2. Joy Food Sunshine Chicken Sausage and Peppers  - I've made this recipe twice already! You can eat it with rice or pasta (I've done both). I made one substitution though. Rather than to add parmesan as a topping, I use a parmesan balsamic vinaigrette. 
  3. Simply Recipes Lentil Stew with Sausage - I love lentils and this hearty stew is really filling but in a good way. 
  4. Tori Avey Chickpea, Spinach and Mushroom Saute - This is a great, healthy option for lunch that's super easy to make. I add corn to mine and if you wanted to add a protein, that would work too. 
  5. Pansalang Pinoy Chicken and Liver Adobo - I've made Adobo before (it's a Filipino dish) but I had never seen this particular one which uses oyster sauce rather than soy sauce. I made this over the weekend, minus the liver since ShopRite didn't have any, and I really like how it turned out! I might be making this kind of adobo from now on!
  6. Mother Thyme French Onion Chicken - I've had this on my list of recipes to try for forever! I love French onion period and I loved this twist on the dish. 
  7. Cravings: Hungry for More Pan-Seared Fish with Herby Browned Butter - I recently bought Chrissy Teigen's second recipe book and this was the first recipe I tried. It was so good! You can use any white fish fillet you want but I ended up using snapper which I was very happy with. 
  8. FoodieCrush Teriyaki Tofu And Broccoli Stir Fry - I hadn't made anything with tofu in a while and when I searched for a recipe, this seemed like a great one to try and it was! I happened to have extra shrimp in the freezer so I also threw that into the mix. 
  9. MyRecipes Cheesy Chicken and Pinto Bean Taco Skillet - Like a lot of people, I stocked up on canned goods but I realized I hadn't used any of the pinto beans yet (I'm always using chickpea and corn!). I really liked how this turned out and it made a lot of servings. 
  10. SkinnyTaste Scallop Tostados - If you love scallops as much as I do, this is a super easy and tasty recipe to try.
